Roasted carrots with browned curry butter and feta yogurt

A side dish as a main course? But yes! We suggest you roasted carrots with browned curry butter and feta yogurt, which tastes great and small. The carrots are coated with a buttery curry broth and accompanied by feta yogurt, which delicately rounds out the flavor composition. A great light lunch. Refreshing, delicious and crunchy, which of course can be eaten as a side dish. For health, there is also some Keto MCT Oil 77% just before serving over the dish. 

 

Preparation:

Preheat the oven to 200 degrees top and bottom heat.

Clean the carrots and, if necessary, remove the peel thinly. Then place them in an ovenproof dish and drizzle the olive oil over them. Place in the oven for about 20 minutes. The carrots should have a nice color and be easy to cut, but still firm to the bite.

Crumble the feta cheese and pour into a tall blender jug, add the yogurt and spices and blend with a hand blender. (If you like, you can also add a touch of sweetness).

Brown the butter, stir in curry and set aside.

Pour the yogurt onto a large plate, spread the carrots on top, pour the curry butter on top, sprinkle with sesame seeds and drizzle the MCT oil on top for a healthy finish.
