Goat cheese muffins

Preparation

  1. Preheat oven to 180° convection oven.

  2. Beat eggs well with spices.

  3. Grate the zucchini, squeeze out the water and mix into the egg mixture.

  4. Pour the mixture into muffin cups, chop the goat cheese and spread over the top.

  5. Bake for about 20 to 25 minutes until done.

 

Tip: Also tastes great cold and makes a good snack.
